Oh how I love an overnight breakfast casserole!  They are just so convenient, especially during a busy holiday weekend when hosting friends and family.  The 4th of July is right around the corner and this mixed berry french toast casserole makes the perfect dish to serve your family because it’s fun, festive and such a crowd-pleaser!  And with flavors like cinnamon, vanilla, and maple along with fresh fruit and an incredible cream cheese drizzle, what’s not to love?!

The best part is you can easily prep this entire casserole the night before and just pop it in the oven first thing in the morning!  It’s really that easy and sooo incredibly tasty.  Oh and the leftovers taste even better the following day so go right ahead and whip this up even if it’s just for the two of you!

INGREDIENTS YOU’LL NEED

You really only need a few simple ingredients to make this delicious french toast casserole and most you probably already have on hand in your pantry or fridge.

  • Bread.  For breakfast casseroles like this, I always prefer using a crusty sourdough bread because it soaks up the egg mixture perfectly without getting too soggy or mushy when baking.  You could also use a brioche, challah or even french bread.
  • Eggs.  Make sure these are whisked really good before pouring on top of your bread!
  • Milk.  Feel free to use any type of milk you’d like for this.  I always use whatever we have in our fridge which in this case was unsweetened almond milk and it tasted amazing!
  • Greek yogurt.  This is a healthier way to make the egg mixture nice and creamy without using heavy cream.
  • Maple syrup.  This sweetens everything up without using any refined sugar and tastes AMAZING in this casserole!  Feel free to drizzle a little more over top after it has baked.
  • Cinnamon and vanilla.  These are a MUST and add so much flavor and extra sweetness to this dish.
  • Fresh berries.  I used a mixture of strawberries, blueberries and raspberries, but feel free to use your favorites in this recipe.  You can even mix about a half cup of berries in with the bread/egg mixture so that the berries bake right in the casserole.

HOW TO MAKE THIS FRENCH TOAST CASSEROLE

This might honestly be the easiest thing you make all weekend!  First cut your loaf of bread into 1-inch cubes and arrange them in the bottom of a baking dish in an even layer.  Then in a large mixing bowl, whisk together your eggs and add in the milk, Greek yogurt, maple syrup, cinnamon and vanilla, mixing it all really well.  Pour the egg mixture over top of the bread, making sure that each piece is nicely coated then cover with foil and place in your fridge for at least 4 hours.  Personally I prefer to do this the night before as it makes things easier and gives the casserole more time to really soak up all those flavors!

When ready to bake, simply pop the casserole in the oven at 350 (still covered) and bake for about 25 minutes, then remove the foil and bake for an additional 20 minutes.  You’ll know your casserole is done when the egg mixture has set and the top of the bread is nice and golden!  Then top with an assortment of fresh berries and a delicious cream cheese drizzle.  If cream cheese is not your thing, you could also drizzle some more maple syrup or even sprinkle powdered sugar over top!

THE CREAM CHEESE DRIZZLE

This might seriously be the best part.  Creamy and delicious cream cheese lightly sweetened with maple syrup all drizzled over baked french toast casserole and sweet berries!  So, so, SO good and super easy to make.  While the casserole is baking in the oven, mix together 4 tablespoons of cream cheese with 1 tablespoon of maple syrup and about 2 to 3 tablespoons of milk using a hand mixer or whisk.  Feel free to add as much or as little milk as you like until you get that desired “drizzle” consistency!  Then just top your warm french toast with fresh berries and this cream cheese for the ultimate breakfast perfect for a crowd!

Ingredients

For the french toast casserole:

  • 1 loaf sourdough bread, cut into 1-inch pieces (about 8 cups)
  • 6 eggs
  • 1 1/2 cups milk of choice
  • 1/2 cup plain Greek yogurt
  • 1/3 cup maple syrup
  • 2 tsp vanilla
  • 1 tsp cinnamon
  • 1 cup fresh or frozen berries (I used a mixture of strawberries, blueberries and raspberries)

For the cream cheese drizzle:

  • 4 Tbsp cream cheese
  • 1 Tbsp maple syrup
  • 2 to 3 Tbsp milk of choice (depending on the consistency you want for your drizzle)

Instructions

  1. In a 9×13 baking dish coated with nonstick spray, arrange bread in an even layer and set aside.
  2. In a large bowl, whisk together eggs, milk, Greek yogurt, maple syrup, cinnamon and vanilla, mixing well, then pour the egg mixture over top of the bread, making sure each piece is nicely coated.  Cover and refrigerate for at least 4 hours, but best overnight.
  3. Preheat oven to 350 degrees F and remove casserole from fridge while the oven preheats.
  4. Keep the casserole covered with foil and bake for 25 minutes.  Remove the foil and bake for an additional 20 to 25 minutes, until the casserole is set and the top is nice and golden.
  5. While the casserole bakes you can make the cream cheese drizzle.  In a small bowl, mix together cream cheese, maple syrup and milk using a hand mixer (or whisk) until cream cheese has a drizzle consistency.  Feel free to add more (or less) milk as needed!
  6. Remove casserole from the oven and top with an assortment of berries and drizzle with the cream cheese mixture.  If you’re not a fan of cream cheese, feel free to top with additional maple syrup or powdered sugar.  Serve and enjoy!

Notes

*This casserole will last for about 3 to 5 days in your fridge and reheats well!
